a friend from nola was baking these so i asked her to post the recipe. i thought shortbread required some kind of cast iron mold. the secret to the density is the fact that there aren’t leavening agents or eggs. super easy to make. and you MUST use the very best butter/extracts you can find because these are pretty much butter & sugar. i substituted pistachios for the pecan meal. turned out to be a very good idea. be careful. these are very addictive.

3/4 lb butter, soft
1 c sugar
1 tsp vanilla
1 tsp almond extract
3 1/2 c flour
1/4 tsp salt
1 1/2 c chopped pistachios or pecan meal

cream butter & sugar. add extracts. knead in flour/salt. fold in nuts.

roll to half an inch thick, cut with cookie cutters & bake 20 minutes at 350
