i LOVE brussels sprouts. especially in the winter. it’s definitely one of my favorite vegetables, possibly favorite foods. a lot of restaurants are featuring them right now. i ate at belly shack for lunch on friday & had the brussels & chorizo. i thought, what an excellent pairing! hearty sprouts pair very well with sausage. i’m not a huge fan of chorizo because of it’s strong flavor. it tends to overpower the delicate sprouts. inspired by bill kim i went to the store & picked up some hot italian sausage to create my own version of sprouts & sausage.

1 lb. brussels sprouts
2 small-medium onions
3 bulbs garlic
1 lb. hot italian sausage, hot links or chorizo
olive oil
sea salt
4 oz. pancetta
parmesan reggiano

cut sprouts in half, drizzle olive oil & salt & roast in oven till brown. in separate pan, thin slice the onions, salt them & carmelize with the pancetta. add thin sliced garlic.

cut the sausage length-wise & fry insides down in another pan. peel off the casing, chop & brown. add to the onion mixture. add the sprouts & cook 10 minutes. top with the parmesan reggiano.

this turned out FANTASTIC. even better than bills! (sorry bill) 🙂 you can substitute any kind of sausage you like. i might try some local hot links in the future. i will also melt the parmesan next time.
