i bought some purple sweet potatoes from dave odd that came with the second exotic mushroom order. i had no idea what to do so i just winged it.

sweet purple pudding

1 lb. purple sweet potatoes
1/4 stick european butter
1/2 cup brown sugar
1/2 bag marshmallows

olive oil & salt

keep skin on & slice potatoes in half. brush skin with olive oil & top with salt. broil skin side up 50 minutes till brown. do not turn. cool & peel off skin & mash in bowl.
melt the butter & sugar. pour into the mash & mix well. press into pyrex baking dish & top with marshmallows. cover with foil & bake 350 for 20 minutes. uncover foil & bake 3 minutes to brown the marshmallows. serve warm.

this reminds me of japanese sweet bean paste. it’s really yummy 🙂
