it’s been quite cold & i have a hard time thinking of much more than potatoes & soups. this soup is made from what i have leftover in my fridge. it turned out remarkable.
1 med. yellow onion chopped
7 cloves of garlic fine chop
2 T. butter
2 cups mushrooms-any kind. i used hedgehogs & yellow foot
fresh ground pepper
1/2 cup basmati rice
2 cups chicken or veg stock
1/4 cup neufchatell or cream cheese
1/2 cup sour cream
1/4 cup half & half, cream or milk
sautee onion, mushrooms & garlic in butter till soft. add salt & pepper. add rice & coat 5 minutes. add water, cover & cook over med-low 40 minutes.
hand blend. add cheese, sour cream & milk. cook uncovered over low stirring often 20 minutes. adjust salt & pepper.
