6 eggs
6 small-med red potatoes
1/2 medium red onion
2 stalks celery

tiny dice the celery & onion & set in big bowl. dice potatoes & boil for 15 minutes. drain & rinse in cold water. hard boil the eggs 10 minutes, soak in cold water, peel & dice same size as potatoes. mix everything together & add the following

1 T dried thyme
good sea salt to taste
fresh ground pepper
1 T paprika
1 T garlic powder

mix well. then add

1 cup horseradish mayo-prepared OR bottled horseradish with regular mayo to taste.
3 T whole grain mustard

fold without smashing up the potatoes. chill at least 4 hours before eating. top with paprika.
