i had raspberry mascarpone filling leftovers from making my macarons, so i decided to make pancakes. i used swedish pancake mix, the filling & one egg, whipped it up & fried in butter in an iron skillet. for some reason they stuck & i just scrambled it up. it turned out to be a delicious bread pudding. topped off with raspberry infused syrup, this was one mighty tasty dessert last nite.

1/2 cup swedish pancake mix
3/4 cup mascarpone mixed with raspberry preserves
one egg
3 T. butter
maple syrup
real raspberries

tonight after i finish my mushroom tamales, i will bake this instead to see how different it turns out. i have a little left over batter. sometimes it’s actually cool when something does not turn out the way you think it will.
