i am so not comfortable with creating my own stuff based on what i have in my kitchen. today i had to do it. i purchased 3 half pound hot italian sausages from a new local food store, of course that was going to be the center of my food universe. it was intended to be used for gumbo. no worries.

i took one large yellow onion, sliced it thin & carmelized in olive oil. thin sliced the sausage & added it with sea salt. cover, cook about 20 minutes. transfer to baking pan & bake till brown another 15 minutes. set aside.

chop 2 heirloom tomatoes & add 5 cloves thin sliced garlic. add 2 T. tomato paste. cook 15 min. add sausage/onion mixture. add 2 T. butter. some chopped olives & capers. fresh chopped oregano-in the garden. basil would also be a good idea. yum.

combine with your favorite pasta. super delish.
