chipotle shrimp caesar salad
serves 2 hungry people or 4 sort of hungry people

for dressing
1/4 cup grated parmesan
1/2 cup extra-virgin olive oil
1/4 cup fresh lime or lemon juice (vinegar if you don’t have it)
4 cloves minced garlic
2 tablespoon minced canned chipotle chiles in adobo
3 tablespoon anchovy paste
fresh parmesean reggiano

puree garlic, chili, anchovy paste & lime juice. add grated parmesean. slowly drizzle in olive oil.

for salad

mixed greens
baby spinach
2 avocados
cherry tomatoes
2 mangos
1 lb. shrimp boiled or grilled (even better)

toss the spinach & greens in a little bit of the dressing. mix the rest seperatly in the rest of the dressing. lay the greens down on a plate & top with remaining ingrediants. shave large pieces of parmesean reggiano to top. don’t forget the fresh ground black pepper!
