for 6 medium pancakes
2 large potatoes peeled-any kind-but i’m partial to yukon golds
1 medium yellow onion
1/4 cup fine chopped parsley
2 t. salt
2 t. pepper
2 T. flour
fine grate the potatoes & onions in a food processor. put in colander, wash, drain & squeeze out all of the water.
whip the eggs, add the parsley, salt, pepper & flour. then add the potatoes & onion mixture.
coat a large fry pan with oil-heat & put 1/3 cup for each pancake & press down. cook about 8 minutes each side until brown. put on a paper towel lined plate, top with another towel & pat out the extra oil.
serve with sour cream or apple sauce.
