this recipe comes from a friend in alaska. it’s a lovely autumn sweet.

i added chocolate pieces. i don’t recommend it. it overpowers the pumpkin flavor. this makes about 3-4 dozen good sized flaky cookies. they have no egg binding them, so they are very cake like. it would be interesting to use some yogurt or egg in the batter.

the glaze is SUPER sweet. 2 cups of powdered sugar is ALOT. the cookies are good without it. but it’s tasty.

1 cup sugar
1 cup canned pumpkin
1/2 cup shortening
2 cups flour
1 tsp each of baking soda, baking powder, cinnamon
1/4 tsp salt
1/2 cup nuts, but i usually put more in – walnuts or pecans
1/2 cup raisins if you like them – I don’t.
bake 9-11 mins at 375, then glaze:

GLAZE- melt 1/2 cup butter till brown, stir in 2 cups powdered sugar and 1 tsp vanilla. Stir in 1-2 TBS milk until smooth (use a whisk if you have one). wait until cookies are cool to glaze them, the glaze goes on much better. YUM!
