a friend asked me to help cook at a theatre fundraiser next weekend. i chose to make samosas. i made many of these years ago when employed as a cook, but they were pan fried wrapped in won ton wrappers. now that i’ve made a few indian dishes, i will make them the indian way. this popular snack seems to be leftovers stuffed into chapati & fried, dipped in tamarind or green chutney. ketchup works on these in a pinch & they can even taste good cold. i need to make 100 pieces & plan to make all the chapati from scratch.
