i have a “thing” for mushrooms. i love them. all kinds. when i was veg (15 years), i used them often for flavor. i picked up a pound of criminis & some dried porcinis at “whole paycheck” the other day. it’s been years since i’ve gone in there, and i don’t know why i ended up in there only intending to purchase european butter, but you can never get out of there under $100 & 3 bags to show for it.
with this, plus a very expensive bag of orzo, i made my own veg stock & orzo mushroom soup. nothing indian about this, it’s just my own recipe based on what i have in the kitchen.

i made the stock out of 2 cartons of organic veg stock (whole foods brand) with 3 bunches of scallion greens, potato, onion, yellow & orange bell pepper, red chili pepper, garlic, yellow onion, thyme, rosemary, bay leaf, chinese 5 spice, ginger & whole white pepper.


then i sauteed 3 bunchs of white scallions, a large chopped yellow onion, a whole bulb of roasted garlic in some olive oil & european butter sprinkled with my new favorite expensive salt-maldon.


after removing the onions at golden brown,  i added one chopped yellow & orange bell pepper & removed.  then i cooked the chopped crimini mushrooms & de-glazed with the water that my 2 ounces of dried porcini mushrooms were soaking in.


i combined it all, added 2 cups of corn, black bean & chili flavored orzos


and now i am eating it.


and it’s darn good.

i really did go to tarjay today to purchase my very first pressure cooker.  it kind of frightens me 😦


a double portion of kala chana is currently soaking in it.

and we both know why
